Ingredients:
- 5 Medium Sized Russet Potatoes
- Medium Onion (1/2 of the onion)
- 1/4 Cup Olive Oil
- 2 Tsp Black Pepper
- 1/4 Tsp Garlic
- 1 Tbs Essiespice Meko Dry Rub
- 1/2 Tsp Kosher Salt
- Baking Sheet
- Aluminum Foil
Procedure:
- Position rack in the middle of oven, preheat oven to 400 degrees and line a baking sheet with aluminum foil
- Lightly sprinkle olive oil on the sheet and set aside
- Wash the potatoes well, cut them into 1/4 cubes, and place them in a medium sized bowl
- Wash the potatoes again and pat them dry
- Add 1/4 cup Olive Oil to the potatoes and mix it till well blended
- Dice half of an onion and add it to the potatoes
- Add the Black Pepper, Garlic, Meko Dry Rub, and the Kosher Salt
- Mix well with hands (wearing gloves), spatula, or by simply tossing the bowl around a few times
- Spread the potatoes evenly on the baking sheet lined with aluminum foil
- Bake for 30-45 minutes until well done
- Serve with Peppered Salmon (recipe will be posted soon!), tossed salad, or Omelet.
