Spicy Roasted Potatoes

Ingredients:

  • 5 Medium Sized Russet Potatoes
  • Medium Onion (1/2 of the onion)
  • 1/4 Cup Olive Oil
  • 2 Tsp Black Pepper
  • 1/4 Tsp Garlic
  • 1 Tbs Essiespice Meko Dry Rub
  • 1/2 Tsp Kosher Salt
  • Baking Sheet
  • Aluminum Foil

Procedure:

  1. Position rack in the middle of oven, preheat oven to 400 degrees and line a baking sheet with aluminum foil
  2. Lightly sprinkle olive oil on the sheet and set aside
  3. Wash the potatoes well, cut them into 1/4 cubes, and place them in a medium sized bowl
  4. Wash the potatoes again and pat them dry
  5. Add 1/4 cup Olive Oil to the potatoes and mix it till well blended
  6. Dice half of an onion and add it to the potatoes
  7. Add the Black Pepper, Garlic, Meko Dry Rub, and the Kosher Salt
  8. Mix well with hands (wearing gloves), spatula, or by simply tossing the bowl around a few times
  9. Spread the potatoes evenly on the baking sheet lined with aluminum foil
  10. Bake for 30-45 minutes until well done
  11. Serve with Peppered Salmon (recipe will be posted soon!), tossed salad, or Omelet.
