Baked Tilapia
Ingredients:
Procedure:
- 3 pieces of Tilapia
- 1 and 1/2 White Onions
- 3 Peppers
- 3 Medium Pieces of Ginger
- 1 Tsp. Ginger Powder
- 1 Tsp. Onion Powder
- 1 Tbsp. Suya Pepper
- 3 Tbsp. White Vinegar
- Salt
- Lemon
- Baking Sheet
- Parchment Paper
- Cooking Spray
Procedure:
- Preheat oven to 350 degrees F.
- Line baking sheet with parchment paper and generously spray the parchment paper with the cooking spray.
- In a large bowl, clean the inside and outside of the Tilapia well - making sure to rinse the blood out completely and remove the scales on the Tilapia.
- Wash with cold water and salt for a few minutes.
- Lightly slash both sides of the Tilapia (2 - 3 times)
- Soak the Tilapia in 3 tablespoonfuls of White vinegar for a few seconds then rinse.
- Soak the Tilapia again with lemon juice (fresh or bottled) for a few minutes and then rinse.
- Blend the onions, peppers, ginger, ginger powder, and onion powder until well blended.
- Lastly, add the Suya Pepper and pulse for a few seconds.
- Place the clean Tilapia in a new large bowl.
- Wearing gloves, generously fill the inside and outside of the Tilapia with the blended ingredients.
- Wrap the bowl with cling wrap/plastic bag and place it in the fridge to marinate overnight (I marinated mine for almost two days) to get the maximum flavor.*
- Lightly shake the bowl and remove the cling wrap/plastic bag.
- Transfer the coated Tilapia to the greased baking sheet.
- Bake in the oven for 30 minutes then increase the temperature to 375 degrees F.
- Bake for an additional 25 - 30 minutes, or until done.
- Serve with Fried Yams, Banku, or Kenkey and Hot Pepper.
Spicy Suya Shrimp
This recipe was very easy to make. I had a bag of already cooked shrimp in the freezer so all I did was defrost it with cold water, washed it with lemon juice and salt a couple of times and dried the shrimp.
I was in a bit of a rush so I did not allow the shrimp to dry completely (shrimp must be dry!)
I added about 2 teaspoons of vegetable oil to the shrimp and added 3 tablespoons of Suya Pepper. I allowed the shrimp to marinate in the shrimp for a couple of hours.
After several hours in the fridge, I preheated the oven to 375 degrees F and lined an ungreased baking sheet with parchment paper then greased the parchment paper.
I added about 3-4 shrimps to each skewer and arranged it on the baking sheet.
I baked the shrimps for about 30-40 minutes, making sure to turn the skewers every 15 minutes. While the shrimps were in the oven, I added more Suya Pepper (optional) while it baked.

"Healthy" Breakfast
